    This month's region, and the nine after it

    We work through Japan one bowl at a time, north to south and back again. Ramen leads, but udon, soba, and reimen regions are on the route too. Every style below is a real local tradition with its own soup, noodle, and etiquette.

      We buy from the region's own makers

      Each month we pick one region and buy its packaged noodles straight from the local makers: dried or semi-dried noodles with sealed soup sachets, the regional instant ramen (or udon, or soba) the way locals gift it, from station shops and department-store food halls.

      The box ships at room temperature

      Everything is shelf-stable, so boxes are packed and shipped at room temperature from [SHIPPING ORIGIN CITY], Japan, and typically arrive in [DELIVERY DAYS] days. Inside: the noodle packs and a printed card on where the style comes from, how locals eat it, and how to cook it.

      You cook it in a few minutes

      Boil, drain, stir in the soup — a few minutes on the stove, following the timing on the card. Then add your own toppings (a soft egg, scallions, chashu if you like). No stock pot, no overnight simmer. Slurping is encouraged.
